Salad Witloof-Endive Orange


3-4 heads of endive   Clean the Witloof heads and slice into thin rings.  Sprinkle the rings with orange juice to prevent browning.  Peel one of the oranges very thinly and cook in water for a minute.  Chop the skin very fine.  Cut the oranges in slices.  Season the sour cream or yoghurt with pepper, salt and some sugar.  Place the Wtloof salad into a bowl and decorate the edge of the bowl with orange slices and parsley.  Pour sour cream and yoghurt on the Wtloof and garnish with orange skin.

Serves 3-4.
